Chocolate Peaks: (from Brett Kissel’s Meemaw)

1/2 - 3/4 cup butter (not margarine)
2 cups icing sugar
1/4 cup light cream
3 cups medium coconut
(1 cup dark chocolate chips used later for topping)

Melt butter in saucepan over low heat. When butter is golden brown, slowly stir in icing sugar, cream, and coconut. (Add coconut & icing sugar until mixture quite stiff).Mix well and remove from heat.

Drop coconut mixture by spoonful onto wax paper (the smaller the better) & very gently shape into a mountain/peak shape. Chill.

Topping: melt 1 cup dark chocolate chips and drizzle by spoon over coconut mixture.

Keep chilled or frozen.
