Carol Becker’s Perfect Peach Pie

Make Pie Crust
Role out pastry dough and place in pie plate; brush with egg whites
Using fresh peaches, peel and slice into pie plate.
Put one layer of sliced peaches, sprinkle with ¼ cup white sugar and ½ tablespoon tapioca
Add another layer of sliced peaches
Add another ¼ cup of white sugar and and ½ tablespoon tapioca
Put top pie crust on and brush with egg whites
Sprinkle lightly with sugar

Place in oven on the lowest rack and bake for 60 – 75 mins at 325*F
(A metal or foil pie plate works best.)
